Where abouts are you arriving from?

If you're coming from overseas and there is a risk of jetlag, then I consider doing day 5 on the first day instead. It's a far easier day if you're tired.

The only other thing is that the trips to the Hunter and Blue Mountains are going to be pretty rushed. Personally, I dont think the Hunter Valley is that great. The wine is pretty good, but unless you're a big wine fan, it's a long way to travel for not much.

From my point of view, Id would consider staying overnight in the Katoomba (Blue Mountains). It will give you more time to take in the scenery (stunning) and explore. Plus, it's a nice relaxing spot at night when all the day trippers leave.

Alternatively, if you still want to do the Hunter Valley as well, then Id consider dropping the Olympic Park tour. Olympic Park isnt really that impressive (Just a bunch of big concrete stadiums) and people dont really go there unless an event is on there.

Of course, I dont know what you're interested in so my choices might not fit yours, but these are a few things to consider.

Have fun, and welcome.

Day 4- might be very rushed, you should allow a couple of days in the Blue Mountains.

Day 1- Just a reminder that if you land at 8am, it'll be closer to 10 or 11am before you get to the city.
All are possible. Try to slot in a Harbour Bridge climb. The bike tour of the Olympic park looks a bit underwhelming, but I have not done it so it may be the high point of your trip for all I know.
Do you have all the tours set up already? A native might be able to give you better idea of how feasible your schedule is. There are a few Syndey guides here:

who can look at your itinerary and make appropriate suggestions. They might also give you the opportunity to see something aside from the major spots like the Taronga Zoo, the Sky Safari, Hunter Valley, the Blue Mountains, Sydney Tower and Harbour, etc that only a local would know about. :)
